How is feta cheese made?
Cheese consists of pasteurized sheep’s milk with an admixture of goat’s milk (maximum 30%). The process of making comes under strict rigours and rules. Next step of making is coagulation (protein shearing), that’s how whey is made, which gets located in saline water, in that feta gets it original salty taste and appropriate humidity. Then feta subjects to maturation process (minimum three monts) and whey’s drain without pressure use.

Original feta cheese is:
– cheese produced only in selected regions of Greece;
– made from sheep and goat’s milk (never from the cow’s one);
– produced on the basis of rennet and saline water;
– using name „feta cheese” for dairy made in other countries than Greece is rigourisly forbidden;
– lack of fake preservatives, dyes and other improvers;
– pristine white cheese, any discoloring testifies to product’s low quality.

Feta cheese features
Feta cheese has really characteristic taste, it is the mix of salty and spicy taste in proportions dependent from the producer. This composition makes cheese perfectly matched with vegetables, olive or sea food. It is also ideal topping to salads, fillings or snacks. Great to brown courses.

How not to get deceived?
Nowadays there is no problem in buying high quality feta cheese in Polish shops. You need to be careful with some details, which attest to their quality.
– on no account do not buy cheese named other than „feta cheese” (Greek type cheese, salad cheese, Greek cheese) – those are low quality „fakes”, which have nothing in common with the original one. Good to know is that „feta” appelation has been protected and reserved for dairy made only in Greece since 2002.
– read the content carefully, no original cheese does not contain any admixutre of cow’s milk
– pay attention to the country of origin, these from Greece are going to guarantee You the highest quality and taste.

The most popular courses with use of feta cheese:
-Tiropitakia is the most favourite one meze, meaning the most favourite one snack for the Greek. They are the triangles made with filo dough, sometimes replaced by the French one, which in Greece is called sfoliata. The dumplings have filling in them made from feta cheese;
-Revithia is a soup made with chickpea and earlier prepared water with fried up onion with a bit of lemon juice and a few drops of olive oil added on the plate. The soup is prepared in a traditional way or in an oven. It’s really filling and warming up.
– Horiatiki is a rural-like salad which contains traditional feta cheese, added to fresh, local ingredients, e.g. tomatoes, cucumbers, green pepper and red onion, black olives and solid portion of olive oil with a pinch of oregano. In Greece, every one use remained salad juice to dip pieces of bread in it, which is eaten afterwards.
